Mushroom and Onion Pizza

For the mushroom and onion pizza, all you need are a few elements. And the variations are endless. You can use as many or as little of the variations, but adding everything gives a complete experience. The variations of onions include sauteed, caramelised and raw that gets roasted in the oven. The Mushrooms I have used are sauteed button mushrooms and dry shitakes. I would have loved to use more varieties of mushrooms but I couldn’t get my hands on any.

So here goes, the sauce is a basic one. Puree onions, tomatoes and garlic. Put it in a saucepan along with some olive oil. Cook it with the lid on for about 25 minutes. Add in the oregano halfway through. The oregano can be dried or fresh.

For the caramelised mushrooms, in a saucepan add an onion, thinly sliced along with 2 tablespoons of olive oil, a quarter teaspoon salt and a teaspoon of sugar. Let it cook on medium heat with the lid on for 30 minutes stirring only once in a while. They’ll turn brown, shrink in size and look sticky.

For the sauteed mushrooms, in a saucepan, add olive oil. Once the pan gets really hot, add in the sliced mushrooms. Saute for 5 minutes, season with salt and pepper.

All that’s left to do is assembling and baking. Stretch the dough into a thin base. Slather over some of the sauce. Top it off with the mushrooms, onions and cheese. Bake for 25 minutes.

Recipe

Multi grain pizza dough – 1 batch

Sauce-
Tomato- 2 medium sized, roughly chopped
Onion- 2 medium sized, roughly chopped
Garlic- 7-9 cloves
Oregano- 2 teaspoons, Fresh or dry

Mushrooms- 1 cup, combination of dry and fresh mixed mushrooms
Onions- 1 cup, combination of sauteed, raw and caramelised sliced onions

For the sauce, puree onions, tomatoes and garlic. Put it in a saucepan along with some olive oil. Cook it with the lid on for about 25 minutes. Add in the oregano halfway through. The oregano can be dried or fresh.

To assemble, Stretch the dough into a thin base. Slather over some of the sauce. Top it off with the mushrooms, onions and cheese. Bake for 25 minutes in a preheated oven at 200 degrees C.
