Pickled onions

These pickled onions and quick to make, and can be made with so many variations. You can try different spices, different herbs and even different pickling liquids. I will mention a few various below. check them out.

Total time – 5 mins + 1 hour

Thinly sliced onions 2 medium onions
White vinegar 3 tablespoons
Water- 150 ml
Coarsely crushed peppercorns 1 teaspoon
Salt- 1 teaspoon
Smashed garlic – 1 clove
Coriander- 3 stalks

thinly slices onions, peppercorns, sea salt, coriander, garlic

Mix everything together and leave it in the refrigerator for about an hour till the colour changes to a deeper pink.

after 1 hour: Onions pickled and ready to serve

Notes

  1. Instead of coriander, you can add mint which adds great freshness.
  2. You can also add bay leaves, dry chillies or cloves, for that additional spice punch.
  3. You can also add thinly sliced carrots, cucumbers, tiny cauliflower florets etc to pickling liquid, although you might have to keep it longer to pickle.
  4. Adding a slice of beetroot deepens the colour and gives vegetables a pink hue.
